This kitchen knife is hand-forged from Japanese SK steel, which offers a perfect balance between ease of sharpening and hardness.

This knife was created as a limited-edition item by re-sharpening a knife that was forged in the early 2000s. Since the number of artisans who hand-forge knives for left-handed users is currently declining, this item is available only while supplies last.

This professional-grade knife has been meticulously finished with the “urasuki” technique by a traditional Japanese knife craftsman.

Note: Kasumi Polished finish blade has some slight scratch line on the blade. and there are some tiny rust and crack on back side tansetsu part,tang part and a tiny curved on cutting edge. it's not defective. ibuki SK knives are designed for professional chefs , are finished with the expectation that they will be sharpened before use. Please note that the blade tips may have minor imperfections.
