This professional-grade sashimi knife is meticulously polished, featuring an excellent shape, urasuki finish, and kasumi grinding.

This is the highest grade of Japanese knife, using white-2 steel from Yasuki, which features superb abrasion resistance, presenting a clean, beautifu kasumi finish. This knife was forged by Tansetsu traditional way. It is recommended for Professional Chefs.
