The one made of Wenger, olive and red heart is the one I made for myself. I liked it so much that I had to give them to my friend and son.
I chose non traditional woods and colors just for fun. Of the three, the olive and cocobolo one balances further back into the handle and feels more similar to traditional European chef's knives. The other two balance more towards the blade.
The steel is fantastic and cuts almost effortlessly. I really like the blade and use it all the time.
